Recipe (Makes 12–16 Clean Cocoa Bites)

Ingredients:

  • 1 cup pitted Medjool dates (soaked if firm)

  • ¾ cup raw walnuts or almonds

  • ¼ cup raw cacao powder

  • 1 tbsp almond butter or tahini

  • 1 tbsp chia seeds or ground flax

  • ½ tsp vanilla extract

  • Pinch of sea salt

  • Optional: 1–2 tbsp cacao nibs or dark chocolate chips

  • Optional topping: shredded coconut, flaky salt, or chopped nuts

Instructions:

  1. Add the nuts to a food processor and pulse until finely ground.

  2. Add dates, cacao, almond butter, chia, vanilla, and salt. Blend until a sticky dough forms.

  3. Press the mixture into a parchment-lined dish and smooth the top.

  4. Sprinkle with any desired toppings.

  5. Chill in the fridge for 30–60 minutes, then slice into bite-sized squares.

  6. Store in the fridge for up to 10 days or freeze for longer shelf life.
