Recipe (Makes 12–16 Clean Cocoa Bites)
Ingredients:
1 cup pitted Medjool dates (soaked if firm)
¾ cup raw walnuts or almonds
¼ cup raw cacao powder
1 tbsp almond butter or tahini
1 tbsp chia seeds or ground flax
½ tsp vanilla extract
Pinch of sea salt
Optional: 1–2 tbsp cacao nibs or dark chocolate chips
Optional topping: shredded coconut, flaky salt, or chopped nuts
Instructions:
Add the nuts to a food processor and pulse until finely ground.
Add dates, cacao, almond butter, chia, vanilla, and salt. Blend until a sticky dough forms.
Press the mixture into a parchment-lined dish and smooth the top.
Sprinkle with any desired toppings.
Chill in the fridge for 30–60 minutes, then slice into bite-sized squares.
Store in the fridge for up to 10 days or freeze for longer shelf life.
